FOOD PREPARATION BASICS: 1. Avoid high-risk foods like raw eggs, undercooked meats and unpasteurized milk products. 2. Use different cutting boards for fruits and vegetables and meats and poultry. 3. Shop with care. Only buy foods before the “sell by” dates. Never buy damaged or bulging cans or jars, don’t buy produce that looks damaged. 4. Keep clean—wash your hands for at least 20 seconds with warm water and soap before and after touching food. 5. Keep foods at the right temperature. Keep your refrigerator at 40 degrees Fahrenheit or below. 6. Thaw frozen foods in the refrigerator or in cold water.
